Ellie Anderson, MHS, RDN, LD, Graduated from the University of Minnesota with her Undergraduate Degree in Nutrition, and Graduated December 2023 summa cum laude with her masters degree in integrative health with a trauma focus… 39 weeks pregnant She has worked in the world of functional health for 7 years now and has built an amazing business @eating_elevated with three locations across Minnesota - growth and scaling is hard and humbling! The journey hasn’t been easy, but she has an amazing team. Her faith is, and always has been at the center of what she does. Even when it comes to healing. she likes to combine the principles of faith, science and education to create digestible info patients can understand and relate to. She fully believes the body can heal in the right conditions. So she seeks to create that at all costs not just for herself but for others. She has opened a restaurant in the heart of her home town @homegrown_stm that doesn’t cook in/use inflammatory oils, uses high quality proteins from agricultural sources that are sustainable and follow primitive principles. She is obsessed with good food and good company.
