Biography
Dr. Eleonora Gafton is a professor, program director, and professional chef in the Nutrition and Integrative Health program at Notre Dame Maryland University (NDM) – School of Integrative Health (SOIH). Growing up on an organic farm in Romania, she pursued chef training and became the first female executive chef in a communist country. Dr. Gafton holds a bachelor's degree from Cornell University, a doctoral degree in clinical nutrition (DCN), a master's degree (MS) in herbal medicine and clinical studies, a PMC in Nutrition, and a health coaching certificate (CHHC). She is a Certified Nutrition Specialist (CNS) and a Licensed Nutritionist in Maryland (LDN), practicing a combination of conventional, holistic, functional, and complementary nutrition and health coaching throughout the Washington, D.C. and NC area.
